Strammer Max is a simple, easy meal to make. Try it the next time you need dinner in a hurry!
I first encountered the Strammer Max at a German pub known for their chicken wings.
We had dinner with friends, and I was excited to try their chicken wings.
They deep-fry the chicken wings until nice & crispy, toss them in a coating of spices (mainly paprika) and serve with thick slices of sourdough bread.
Finger-licking good! (To steal THE famous tag-line.)
Tobi, as usual, ordered something other than wings. He got a Strammer Max.
“A what?” I asked
“Strammer Max.”
“What?”
“Strammer Max. You’ve never heard of it?”
Nope, I haven’t.
That was the first I had heard of such a thing.
Apparently, it’s popular in Germany.
How would I have heard of it if he hasn’t told me about it?
So what is Strammer Max?
It is an open-faced sandwich with ham and a fried egg.
It’s a very satisfying meal and it couldn’t be easier to make!
You get a thick slice, or two, of your favorite bread. Sourdough will be excellent for this.
Smear lots of butter on your bread.
Get a frying pan, heat over medium heat and pour a glug of oil and a pat of butter.
Don’t forget the butter!
Fry an egg or two to your desired doneness. Don’t forget to salt them!
(Obviously, I’ve forgotten to do this a time or two 😁)
Get a couple slices of ham, place them on the bread.
For this one, we had some Rohschinken (which literally translates to raw ham. This ham is cured by salting then air-drying.) I prefer cooked ham, but we didn’t have any.
Top with a fried egg (or eggs).
Then, you may sprinkle with paprika, if desired.
That’s it!
And after that first encounter at the pub, I’ve enjoyed a Strammer Max quite often.
When we visit Tobi’s parents, we have this when his mom has not prepared something for dinner. They always have the ingredients on hand, so it’s only a matter of frying an egg, and dinner is done!

- 2-4 slices of ham of choice
- 1 - 2 large eggs
- salt and pepper
- oil for frying eggs
- paprika, optional

- Arrange the ham on the bread.
